Makhana, also called popped water lily seeds, is a snack with a long history in India. The seeds come from Euryale ferox, an aquatic plant grown in the ponds and wetlands of Bihar. They are harvested by hand, dried, and then dry-roasted at high heat until each seed pops. Roasted, never fried.
In Ayurveda, makhana is classified as sattvic and is traditionally eaten during fasting periods. Its light, airy crunch is why it is often reached for in place of popcorn.
